How this Eggcellent Cuisine Shaped My Love

This is my culinary journey. It astonished me how a simple egg bread recipe transformed into a heartwarming memory. Even today, when I cook, it feels delightful.

I love eggs! I can devour it any time of the day and any season of the year. Eggs have a special corner in my heart and in my kitchen. Mom is not a big fan of eggs, but thankfully my dad and bhaiya just love them like I do. I realised my deep love for eggs while I was far from home working in Gujarat’s Surat city. I have always heard about the popularity of Surat’s food. So, while exploring, I found out more than a hundred egg dishes that were available in restaurants and streets carts. No other food has ever clicked by my taste buds.

Cheese Bread Omlet

I especially love egg bread. Sounds familiar? Well, I cook it differently – Instead of the frying pan, I use Kadai to make this delicacy, I whisk three eggs, green chillis, chilli flakes, oregano and salt in a bowl. I then put two spoons of olive oil in the Kadai, pour the liquid and once it is half fried; I dunk the bread into it and gently turn it over. Once the entire bread is covered with egg, I add another slice with a slice of cheese in between. Writing this just makes my mouth water and make one. 

During my whole working tenure, I must have eaten egg bread almost a thousand times at breakfast, lunch or dinner. It is heavy but scrumptious at the same time. Today when I cook eggs at home, I’m filled with nostalgia about the meals at my workplace away from home, the dish was easy to prepare and gave me a sense of wellbeing. No other food gives me comfort as this one does. The taste is always consistent and also rich in proteins, carbohydrates and other nutrients. I think, for me, comfort food is a stressbuster. It is a food that has a nostalgic appeal. It’s heavy; it’s tender and hot; it’s comforting and it feels like a big hug.

  • 3 Eggs
  • 2 Bread Slices
  • 1 Cheese Slice
  • 2-3 green chilis, finely chopped
  • Chilli Flakes
  • Oregano
  • Salt to taste
  • Red Chilli Powder
  • 2-3 spoons of Olive Oil
  • Chopped coriander leaves
